How do I know whether a prompt is worth tracking?

Short answer
A prompt earns its place if a real buyer would type it before they know your brand. Branded prompts will nearly always mention you and flatter the total, so keep them separate from category prompts, which are the ones that decide a shortlist.
A quick checklist
- Would someone who has never heard of you ask this?
- Is it about something you actually sell, for someone you actually serve?
- Does the answer name products, rather than just explaining a concept?
- Is it different enough from the prompts you already track?
Test it before you add it
Ask the question yourself on a couple of engines and read the answers. If they do not name any brands, the prompt measures little. If they name the brands you compete with, it belongs in the set.
